How to Roast Spanish Peanuts
2 cups raw Spanish peanuts
1 tsp salt
1 TBS honey (or to taste)
1-1/2 TBS peanut oil
PREHEAT oven to 350 degrees.
Place the peanuts on a baking sheet and roast for 15 minutes. Allow to cool and rub peanuts to remove the skins. Place in the food processor or blender and add salt and the honey; processing for 1 minute. Scrape down the sides and turn the appliance back on. Slowly add the peanut oil and continue processing until smooth.
You may also just purchase honey roasted peanuts and process two cups of nuts in the blender with 1-1/2 TBS peanut oil.
Store in the refrigerator for two months in an airtight container.
