SPICY CHINESE FRIED CHICKEN
Ingredients
1.5 pound chicken (dark meat)
1 scallion
1 Cup chinese peppercorn (sichuan pepper)
1 star anise
1 cup peanuts(optional)
3 cups red dry chillies
1/2 head of garlic
8 slices of ginger
Corn starch enough to coat
1 tsp sugar
salt to taste
2 tbsp soy sauce
1 tsp chinese five spice
3 tbsp Chinese cooking wine
- Cut the chicken, as evenly as possible. Pieces size about 2-3 cm.
- Place the pieces to a bowl. Add 3 tbsp chinese cooking wine, 1 teaspoon five-spice, 1 teaspoon of salt, 2 teaspoon pf soy sauce, few slices of ginger, minced scallion.
- Nice mix all and set aside for 20 minutes.
- Preheat a frying oil on a high heat.
- Add cornstarch to the chicken and mix it well.
- After the oil heated at 60% (check it by wooden chopstick, after a half a second you will see small micro bubles) place the chicken to the oil for 2-3 min.
- Take the chicken out, and place it on a grid or a paper towel.
- Wait to heat the oil up to about 190C. You will see a little smoke come out of the oil. Check it with wooden chopstick, you will see a crazy bubles.
- Put the chicken back to the oil for a one minute or less.
- Take the chicken out of the oil again an let them strain the oil.
- Preheat a skillet to a medium-high heat.
- Add a few oil, the rest of a ginger slices, all peppercorn, star anis, cook it about a minute on a medium heat.
- Add garlic gloves, chilie pepper. Reduce the heat to medium-low, and cook it slowly until the aroma and flavor out of these.
- Add the peanuts. Roust it with stirring constantly for a minute or two, but not to get them burnt.
- Add the chicken. Stir that around. Add 1 teaspoon of sugar. Add tiny splash of cooking wine. Stir it well. And shut the heat off.
