Spicy chicken wings
with Frank's hot sauce, and blue-cheese dip

Frank's hot sauce

water - 1L
garlic - 1 head
fresh habanero - 2
fresh chile peppers (sweet) - 10
(can use red peppers to get more red sauce, or orange ones to get more orange color)
kosher salt - 1 nice big pinch
apple cider vinegar - 1/4 cup - (can try to use a rice wine vinegar)
white sugar - about 1/4 cup or less

- Let it simmer on a mid heat, until peppers and garlic have softened up. Don't boil them.
- Take one habanero out.
- Cut and mix with blender the rest of all veges
- Taste the mixture. If it is not spicy enough, place half or whole of the second one habanero.

xanthan gum - 1 teaspoon.
- Add the xanthan gum to the prepared mixture and mix it again. You can try to use a cornstarch instead.

Adobo seasoning
INGREDIENTS
UNITS: US
2 tablespoons salt
1 tablespoon paprika
2 teaspoons ground black pepper
1.5 teaspoons onion powder
1.5 teaspoons dried oregano
1.5 teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon chili powder

DIRECTIONS
In a bowl, stir together the salt, paprika, black pepper, onion powder, oregano, cumin, garlic powder, and chili powder.
Store in a sealed jar in a cool, dry place.

Blue cheese dipping sauce
Blue cheese - 150-200g. Grounded and crumbled.
Garlic - 2 gloves. Minced.
Some white(or black) pepper. Cracked.
Buttermilk(more sweet) or sourcream(more sour) - 100g.
(You can add some celery extract, or a few dips of lemon juice on taste)
Mix all together in depth.

Throw it in the fridge for when it is time to plate.

Wings

- Cut chicken wings to a drumette and a wingette pieces.
- Apply the Adobo seasoning, some black pepper and some salt. Dry rub it. You should cover wings a whole in spice.
- Place wings in a fridge for a little while.

(confit the wings)
- After 40-60 minutes place the wings to a dutch oven, pour a soybean oil to cover all wings.
- Cover the dutch oven with cap or foil.
- Place wings to a preheated oven (350F or 180C) for a 15-20 minutes. And then turn the heat down to 250F (or 120C).
- Cook it until their fork tender. It takes about an hour-and-half to two hours.
- After they will cook properly, take the wings out of the oil. Put it to a sheet tray or alike, with parchament covered. You shuld avoid of sticking wings together. And put them in the fridge.
- Strain the rest of oil to remove the little bits and pieces. We will use the oil to fry the wings.

- Make a wing sauce.
- Place to a saucepan some butter (~50g), minced garlic (1 glove), ketchup (2 tablespoon), a nice pinch of salt, some frank's hot sauce (1/4 cup).
- Heat and stir it until butter melted and all mixed well and sauce to be warm.

- Prepare the oil for frying. Preheat it in the pan (high heat, about 190C)
- Put the wings to the oil just to crisp them up and heat them through. About 3-5 minutes.
- Take them out and place on a racked drain or a fat drain paper.
- Add a few salt and some adobo seasoning while they are still hot before we will apply the sauce.

- Sauce the wings
- Place the wings to a large rounded bowl. Add the wing sauce, a quite, just to cover the whole wings.
- Swirl them around, give them a toss, get them nice and saucy, get it all over yourself, until the wings will coated well.
